Bacon shrimp SauteBacon shrimp Saute,
2 lbs. fresh jumbo shrimp, peeled and deveined
2 large garlic clove, sliced thinly
1 3/4 finely chopped rosemary
1 3/4 teaspoons fresh thyme leaves
1 3/4 tablespoons olive oil
5 ounces bacon cut into 1 1/2 inch pieces
kosher salt and freshly ground black pepper
3 teaspoons fresh lemon juice
3/4 cup chicken stock low salt
1 3/4 tablespoons unsalted butter.
In a large bowl toss together the shrimp, garlic, rosemary, thyme and oil. set aside to marinate at room temperature for 30 minutes,
Arrange the bacon in a large skillet and cook over medium-high heat, stirring occasionally, until almost all the fat is rendered, about 8 minutes. Pour off and discard all but 2 tablespoons of the bacon fat. Add the shrimp, marinade ingredients, and salt and pepper to taste. Cook over medium-high heat until the shrimp are opaque and cooked through, about 2/12 minutes per side.
Remove the shrimp and bacon and place on serving dish. add the lemon juice and stock to the skillet. Cook stirring up the cooked on brown bits. Cook until liquid is reduced by half, about 2 minutes. Swirl in the butter has melted. Pour the sauce over the shrimp and serve hot.
