1/2 cup butter
one 8 ounce package of cream cheese. ( can you lite cream cheese if you would like)
4 tablespoons butter
6 green onions, chopped
1 bell pepper, chopped
1 clove fresh garlic, minced
2 stalks of celery chopped
1/4 pound fresh mushrooms, sliced
1 pound fresh gulf shrimp, peeled and deveined
1 can cream of mushroom soup with roasted garlic
1/2 teaspoon red pepper flakes
salt and pepper
1 cup fresh crab meat
3/4 cup cooked rice
1 cup parmesan cheese, grated
1/2 cup ritz cracker crumbs
2 tablespoons butter, melted
Melt cream cheese and 1/2 cup butter in a heavy saucepan over low to medium heat. Set aside. Melt 4 tablespoon butter in a heavy skillet. Add bell pepper, celery, garlic and onion. saute until tender. Add mushrooms and fresh gulf shrimp. Saute until mushrooms are tender and shrimp is pink. DO NOT OVER COOK. It will only take 2 to 3 minutes. Combine cream cheese and onion mixture in a mixing bowl. Add soup and red pepper flakes. Season to taste with salt and pepper. Add crab meat and rice. Pour into a buttered baking dish. Combine parmesan cheese and cracker crumbs. Toss with melted butter. Sprinkel over casserole and bake at 350 degrees for about 25 minutes or until bubbly.
