Pancetta Shrimp with AvocadoThis recipe is like the pancetta wrapped shrimp but much easier.
One small onion chopped
0ne small package of fresh sliced mushrooms
One or two tablespoons of minced garlic
Sautee the above iingredients with about 4 tablespoons of olive oil, or however much you like, until soft.
Add two pound of fresh gulf shrimp with about 1/2 pound of pancetta chopped. Add 1 tablespoon of crushed sage to taste.
Stir fry for a couple minutes until shrimp is done. Do not overcook.
Serve with fresh avocado slices in fresh corn tortillas.
You can chopped the avocado slices into smaller pieces mix all together and serve as a dip with corn tortilla chips.
