1 1/2 to 2 lbs of Fresh Gulf Shrimp 1/2 cup flour 1/4 cup cornstarch 1/2 teaspoon of baking powder 1/4 teaspoon salt 1/2 cup water 1 egg beaten 1 teaspoon vegetable oil Hot cooked rice Vegetable oil And sweet-and-sour sauce
Peel, devein, and rinse Fresh Gulf Shrimp
Combine flour, baking powder, cornstarch, salt, egg, water, 1 teaspoon vegetable oil. Mix well.
Dip Fresh Gulf Shrimp into batter, and fry in hot oil (375) until golden brown.
Serve over Hot Rice topped with Sweet-and-Sour Sauce. Serves 4 to 6

Combine sugar, soy sauce, salt, catsup and 2/3 cup water in a saucepan; bring to a boil. Dissolve cornstarch in 1/3 cup water to make a paste. Gradually add cornstarch paste and vinegar to sauce mixture; cook stirring constantly, until smooth and thickened. stir in pineapple and vegetables. Yields about 3 1/2 cups.
