The Cobb Ka-Bob Grilled Shrimp
Prep Time: Approx. 15 Minutes Marinate: Approx. 60 Minutes Cook Time: Approx 8 Minutes
Ingredients: 1 1/2 onions 1/2 yellow bell pepper 1/2 red bell pepper 1/2 green bell pepper 4 bacon strips 1/2 cup fresh ginger 1/2 cup sugar 1/4 cup soy sauce 1 12 oz. bottle Mexican beer 1/2 clove garlic salt to taste fresh ground pepper
Directions
1. To prepare marinade, combine beer, 1/2 onion, sugar, soy sauce, garlic, and ginger in a blender and puree.
2. Peel and de-vein 10 Colossal shrimp.
3. Skewer with rectangular pieces of onion and bell pepper alternating colors of pepper for a beautiful presentation.
4. Wrap fresh colossal shrimp with bacon strips.
5. Add salt and pepper to taste.
6. Allow to marinate for one hour.
7. On high heat, place skewers on a grill allowing each side too cook approx. 4 minutes
8. Brush marinade while cooking.
Serve hot off the grill.
